

This was beyond delicious. Get your hands on some leek!
You need
2 cups cooked brown rice
3 crushed garlic cloves
2 sliced leeks
3 thinly sliced carrots
1 cups frozen peas
4tbs lemon juice
1tsp stock powder dissolved in a splash of water
1 TBS mixed herbs
Pepper
Saute the leeks and carrot until soft
Add the garlic and cook for another minute
Add the cooked rice, peas, herbs, stock, lemon juice and pepper and cook for 3-4 mins
To serve I’ve panfried some tempeh seasoned with coconut aminos
