CHIMICHURRI SAUCE

Chimichurri sauce is a vibrant and flavorful condiment that hails from Argentina and is widely enjoyed in South American cuisine. This sauce is typically made with a blend of fresh ingredients,

Ingredients

1 cup chopped fresh parsley (preferably flat leaves)
3-4 cloves of garlic, finely chopped
2 tablespoons dried oregano
1 teaspoon crushed red chili (optional, to give it a spicy touch)
1/2 cup extra virgin olive oil
3 tablespoons red wine vinegar or white wine vinegar
1 tablespoon lemon juice
Salt and pepper to taste

Preparation:

1. In a bowl, combine the chopped parsley, garlic, oregano, and crushed red chili pepper (if using).

2. Add the olive oil, vinegar and lemon juice to the herb and spice mixture.

3. Mix all ingredients until well combined.

4. Taste the sauce and adjust it to your taste with salt and pepper.  You can add more vinegar or oil if you prefer it more acidic or less thick.

5. Let the chimichurri sauce sit for at least 30 minutes before using it.  This allows the flavors to blend and develop further.

6. Chimichurri sauce can be served as an accompaniment to grilled meats, such as Argentine asado, but it is also delicious with chicken, fish, or even as a salad dressing.
