Crispy Zucchini Parmesan Rings
Ingredients:
2 medium zucchini, cut into 6 mm thick slices
50 g grated Parmesan cheese
50 g breadcrumbs (preferably panko for extra crunch)
25 g rolled oats
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1 beaten egg (for glazing)
Olive oil for frying

Instructions:
1. Prepare the zucchini
Cut the zucchini into slices approximately 6 mm thick.
2. Prepare the breading
In a bowl, combine the breadcrumbs, rolled oats, Parmesan cheese, oregano, garlic powder, onion powder, salt, and pepper.
3. Prepare the beaten egg
In another bowl, beat the egg.
4. Coat the zucchini slices
Dip each zucchini slice in the beaten egg, then coat it with the breading mixture, pressing lightly to ensure it adheres well.
5. Fry the zucchini
Heat about 1 cm of olive oil in a large skillet over medium-high heat. Fry the zucchini slices until golden brown and crispy, about 2 to 3 minutes per side.
6. Drain the excess oil
Place the fried slices on a plate lined with paper towels to absorb the excess oil.
7. Serve
Serve warm as an appetizer or side dish, and enjoy these crispy bites with a delicious parmesan flavor!
