Cheesy Chicken Broccoli Rice Casserole Recipe

This Cheesy Chicken Broccoli Rice Casserole is the ultimate comfort food! A creamy, cheesy dish loaded with tender chicken, broccoli, and rice—perfect for dinner or as a make-ahead meal.

Ingredients:

2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
2 cups cooked rice (white, brown, or your preferred variety)
2 cups fresh or frozen broccoli florets
1 can (10.5 oz) cream of chicken soup (or use a homemade version)
1/2 cup sour cream
1 cup shredded cheddar cheese (plus extra for topping)
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup milk or chicken broth
1 tablespoon butter (for greasing the baking dish)

Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.

Prepare the Casserole Mixture:

In a large bowl, combine the cooked chicken, cooked rice, and broccoli florets.
Make the Sauce:

In a separate bowl, mix the cream of chicken soup, sour cream, garlic powder, onion powder, Parmesan cheese, and milk (or chicken broth). Stir until smooth. Season with salt and pepper to taste.
Combine and Mix:

Pour the sauce mixture over the chicken, rice, and broccoli. Stir to combine everything evenly.
Assemble the Casserole:

Transfer the mixture to the prepared baking dish. Top with shredded cheddar cheese.
Bake:

Cover the casserole with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Serve:

Let the casserole rest for a few minutes before serving. Garnish with extra cheese or fresh herbs if desired.
