Sweet potato waffles
Sweet potato waffles are on your plate in just 25 minutes. The simple recipe for savory waffles is so delicious. Arugula goes perfectly with it.
INGREDIENTS (For 4 pieces)
250 g sweet potatoes
50 g soft butter
2 eggs (size M)
150 g wheat flour (type 405 or 550; alternative: spelt flour type 630)
1 tsp paprika powder
1 tsp baking powder
½ tsp salt
½ tsp pepper
100 ml milk (alternative: water)
Some fat for the waffle iron
Some arugula for serving, if desired
PREPARATION
Step 1
Wash and peel the sweet potato and finely grate it with a kitchen grater. Mix the soft butter and eggs in a bowl with a whisk until creamy.
Step 2
Mix the flour with the paprika powder, baking powder, salt and pepper and add to the egg-butter mixture alternately with the milk. Mix everything well, add the grated sweet potato and mix in. Let the dough rest briefly.
Step 3
In the meantime, heat up a waffle iron and grease it with a little oil or butter. Put about 2 tablespoons of dough per waffle in the iron and bake for about 3-4 minutes until golden brown. Collect the finished waffles on a cake rack so that the moisture does not soften them.
Step 4
Serve the waffles immediately with rocket salad as desired. Tahini (sesame paste) also goes well with them. You can store the waffles in an airtight container for at least 2 days and toast them to reheat them.
