CREAM DONUTS

INGREDIENTS

90ml of warm water150ml buttermilk1 egg50g melted butter500g flour50g sugar7g dry yeastCustard to fillsugar to cover

PREPARATION

1. Beat the warm water with 50g of all the sugar and add dry yeast.  Beat again and set aside for 5 minutes.2. Add the remaining sugar, buttermilk, eggs and melted butter to the yeast solution.  Whisk until sugar dissolves.3. Combine the liquids with the flour and knead the dough until smooth, about 10 minutes.  Transfer to a greased bowl, cover and set aside for 1 hour.4. Stretch the dough and cut it into circles.  Use a smaller round cutter to cut out the center of half of the dough circles.5. Sprinkle some water all over the round and place circles with the hole in the middle on the top.  Press lightly.  Set aside for 15 minutes.6. Heat the vegetable oil to 180C/350F.  Fry the donuts on both sides for 3-4 minutes.  If the center swells, make a small slit to release air.7. Coat golden donuts with sugar and fill each hole of the donut with custard.
