25 g fresh bakerโ€™s yeast
350 ml of lukewarm water
500 g of wheat flour
1 teaspoon salt
2 cups of oil to fry.
ยฝ cup of sugar to coat


  1. Dissolve the yeast in a little warm water and add the rest of the water, using a wide container.
  2. Add the flour and salt, kneading with your hands until you get a soft and sticky dough.
  3. Cover the dough with a cloth and let it rest for about 60 minutes.
  4. Prepare a pot or deep frying pan with oil and heat over medium low heat without letting it smoke.
  5. Shape the buรฑuelos by taking a portion of the dough with an open hand and then closing it so that a portion comes out between the index finger and thumb.
  6. Take that portion with the other wet hand and dipping the thumb to make the hole.
  7. Carefully drop the dough into the oil. Put as many portions of dough as will fit in the pan without crowding so they donโ€™t stick.
  8. Cook until browned on one side and flip to brown on the other. In batches of 5 units, it takes about 4 minutes.
  9. Remove the fritters from the oil, drain well and put on absorbent kitchen paper to remove excess oil.
  10. Sprinkle the fritters with sugar.
  11. Serve and enjoy.
