Custard-Filled Donuts

Ingredients:

For the dough:

2 ½ cups (320 g) all-purpose flour

2 tbsp sugar

1 tsp salt

2 tsp instant yeast

¾ cup (180 ml) warm milk

2 tbsp unsalted butter, softened

1 large egg

For frying:

Vegetable oil (for deep frying)

For coating:

½ cup (100 g) granulated sugar

For the custard filling:

2 cups (500 ml) milk

4 egg yolks

½ cup (100 g) sugar

3 tbsp cornstarch

1 tsp vanilla extract

2 tbsp butter

Instructions:

1. Make the dough:

1. In a large bowl, mix flour, sugar, salt, and yeast.

2. Add warm milk, egg, and butter. Mix until a soft dough forms.

3. Knead for 8–10 minutes until smooth and elastic.

4. Cover and let it rise for 1–1.5 hours or until doubled in size.

2. Shape the donuts:

1. Punch down the dough and roll it out to about ½ inch (1.5 cm) thick.

2. Cut into circles using a round cutter or shape by hand.

3. Place on a floured tray, cover, and let rise for another 30–45 minutes.

3. Fry the donuts:

1. Heat oil to 170°C (340°F).

2. Fry each donut for 1–2 minutes per side, until golden brown.

3. Remove and drain on paper towels.

4. Roll warm donuts in sugar.

4. Make the custard:

1. In a saucepan, whisk together egg yolks, sugar, and cornstarch.

2. Gradually whisk in milk.

3. Cook over medium heat, stirring constantly, until thickened.

4. Remove from heat and stir in butter and vanilla.

5. Let it cool completely.

5. Fill the donuts:

1. Use a piping bag with a round tip to fill each donut with custard.

2. Serve and enjoy!
