Outrageously Orange Pasta

Outrageously Orange Pasta is a vibrant and flavorful dish that captivates both the eyes and the taste buds. The key to its vivid hue lies in the combination of fresh, sun-ripened tomatoes and a generous splash of roasted red pepper sauce.


1 roasted carrot
1 garlic clove
2 Tbsp nutritional yeast
1/2 tsp salt
1/2 tsp black pepper
1/2 cup walnuts, soaked 6 hrs
1/2 cup veggie broth
6 ozΒ  lentil pasta (or pasta of choice)
1 cup chopped Kabocha squash
1 cup halved orange grape tomatoes


1. Blend together roasted carrot, garlic clove, nutritional yeast, walnuts, veggie broth, salt, and pepper until smooth.

2. Cook pasta according to directions, and throw in Kabocha squash 5 minutes before done cooking.

3. Drain pasta and squash and return to pot with orange grape tomatoes and sauce.

4. Toss together and garnish with parsley and black pepper.
