Pasta With Shrimp

Pasta with shrimp is a classic dish of international cuisine that combines the softness of pasta with the texture and delicate flavor of shrimp.  It is generally prepared with ingredients such as garlic, olive oil, parsley and sometimes a touch of white wine to enhance the flavor.  It is a delicious and quick option for seafood lovers.

Ingredients:

• 250 g of pasta (preferably linguine, spaghetti or fettuccine)

• 300 g large shrimp, peeled and deveined

• 3 tablespoons olive oil

• 4 cloves of garlic, minced

• 1/2 teaspoon red chili flakes (optional, adjust to taste)

• 1/2 cup fish broth or chicken broth

• 1/4 cup of white wine (optional)

• 1 cup cherry tomatoes, cut in half

• Salt and pepper to taste

• Chopped fresh parsley

• Grated Parmesan cheese (optional)

Be sure to thaw the shrimp properly to avoid overcooking it, and consider making a garlic-butter sauce to enhance its flavor when paired with the pasta.

Preparation:

1. Cook the pasta: Boil water in a large pot.  Add salt and cook pasta according to package directions until al dente.  Drain and reserve a cup of pasta cooking water.

2. Cook the shrimp: In a large skillet, heat the olive oil over medium heat.  Add the shrimp and cook for 1-2 minutes on each side, until pink and cooked through.  Remove the shrimp from the pan and set aside.

3. Sauté the garlic and chili flakes: In the same pan, add a little more oil if necessary and add the minced garlic and red chili flakes.  Sauté for about 1 minute, until garlic is fragrant.  Be careful not to burn the garlic.

4. Add liquids and tomatoes: If you are using white wine, pour it into the pan and let it evaporate for a few minutes.  Then, add the fish broth or chicken broth.  Add the halved cherry tomatoes and let them cook for about 3-4 minutes until the tomatoes soften slightly.

5. Combine ingredients: Add the cooked shrimp back to the pan.  Mix everything gently to combine the flavors.  If the sauce seems too thick, you can add a little pasta cooking water to adjust the consistency.

6. Add the pasta and finish: Add the cooked pasta to the pan and mix well to coat it with the sauce and shrimp.  Cook for a few additional minutes to allow the pasta to absorb the flavors.

7. Season and serve: Taste and adjust seasoning with salt and pepper as needed.  Sprinkle fresh chopped parsley over the pasta.

8. Optional: If you wish, you can serve the pasta with shrimp with a little grated Parmesan cheese on top.
