Cheesecake is a delectable dessert loved by many around the world. It consists of a rich, creamy filling typically made from cream cheese, sugar, and eggs, all set atop a crumbly graham cracker or biscuit crust. Cheesecakes can be flavored in various ways, from classic New York-style with a hint of vanilla to decadent options like chocolate or fruit-infused varieties.
•4 large eggs
•500 g of cottage cheese
•100 g of cornstarch
•100 g of sugar

1. Separate the egg whites from the egg yolks. Beat the egg whites very stiff with a pinch of salt. Beat the egg yolks with the sugar until they whiten and double in size. Add the cottage cheese and mix. Add cornstarch with lemon zest or vanilla extract. Incorporate the whites into the snow gently without breaking them little by little. This is the secret of the cake! Even if the whites aren’t fully incorporated, it doesn’t matter! The dough should not be smooth. Pour the mixture into the mold. Bake and cook for about 30 minutes.

3. To prepare the fruit dressing, cook 150 g of berries with 50 g of vanilla sugar, let cool to room temperature and pour over the cake.
4. Prepare the hazelnut sauce with 150 g of chocolate cream, 50 ml of milk and 50 g of hazelnuts. Pour over the cake and enjoy all the chocolate flavor, on perfectly soft cheesecakes.
