Tortellini casserole

Do you fancy the world’s best tortellini casserole? Then here’s the delicious recipe with creamy tomato sauce, ham and baked with cheese!
INGREDIENTS
400 g tortellini (e.g. with ricotta and spinach filling)
2 medium-sized onions
2 cloves of garlic
300 g mushrooms
3 tomatoes
200 g cooked ham
4 tbsp olive oil
50 ml white wine (or vegetable stock)
200 g cream
1 can chopped tomatoes (400g)
Salt and pepper
1 tbsp Italian herbs
250 g grated cheese (e.g. Emmental or Gouda)
PREPARATION
1. For the casserole, cook the tortellini in a pot of boiling, salted water according to the instructions on the packet. Drain the tortellini and rinse briefly with cold water. In the meantime, peel the onions and garlic and dice finely. Remove the stems from the mushrooms and dice the mushroom heads. Wash the tomatoes, halve them, remove the stems, quarter them and cut into large pieces.
2. Cut the cooked ham into strips. Heat the olive oil in a pan. Sauté the onions and garlic for about 2 minutes. Add the mushrooms, tomatoes and ham and sauté for a further 2 minutes. Deglaze with the white wine and let it simmer. If you don’t want to use alcohol, use vegetable stock.
3. Preheat the oven to 185 degrees circulating air (205 degrees top and bottom heat). Put the cream in the pan, stir in the chopped tomatoes from the can and season with salt, pepper and the dried herbs. Put the tortellini in the sauce and pour everything into a casserole dish (approx. 26 cm long). Sprinkle the casserole with the grated cheese. Bake in the preheated oven for approx. 25 minutes until golden brown.
