Stuffed Tex Mex peppers

These stuffed Tex Mex peppers with minced meat are low carb, quick to make and super tasty

2 medium-sized peppers

350g lean minced meat

1 onion

1/2 pack of taco spice mix or other spices of your choice (salt, pepper, paprika powder, cumin, โ€ฆ)

100g water

80g salsa

100g grated low carb cheese, for example cheddar cheese or gouda

125 g sour cream

Preparation:

1.) Preheat the oven to 180 degrees top and bottom heat.

2.) Wash the peppers, halve them and remove the seeds. Finely chop the onion.

3.) Heat a coated pan and fry the onion pieces and the minced meat with a little oil. Then add the taco spice mix and the water and simmer until the minced meat is cooked through. Stir frequently.

4.) Stir in the sour cream, salsa and 60g of cheese and season with salt and pepper if necessary.

5.) Place the pepper halves in a baking dish and fill with the mixture.

6.) Now bake the peppers for 45 minutes. Halfway through the time, sprinkle the pepper halves with the remaining cheese.

7.) Remove the stuffed peppers and serve warm.
