Deep dish pizza


Pepperoni to taste spices 240ml water
45ml sunflower oil
15 gr sugar
375 gr strong wheat flour 200 gr grated mozzarella cheese
8 g salt
10 gr baker’s dry yeast
300 gr tomato sauce Parmesan cheese to taste

Procedure screening

In a bowl, mix the warm water, sugar and dry baker’s yeast. We let this rest for 30 minutes, to be able to ferment.

After this time we add the flour, salt, sunflower oil and fermented yeast, we begin to knead the mixture until we have an elastic dough.

This process will take between 15 and 20 minutes of work.

You can let it rest for 5 minutes and continue, when this time has passed, turn the dough onto a floured surface and work it for 2 or 3 minutes, form a ball and place it in a floured bowl.

Let the dough rest in a warm place for 1 hour.

After this time the dough will have grown and we turn it over again on a floured work surface.

Divide the dough into two parts and reserve one of them.

With the help of a roller we stretch the dough, we place the stretched dough in a round and removable mold or another round mold that we have with high walls.

We must Adjust the mass to the walls and the base of the mold without caring, for now that there are remains on the outside since we will cut them in due course.

We distribute all the mozzarella cheese on the base of the pizza, so that it is in the style of homemade recipes, the more cheese you have, the better, slices of pepperoni on top of your taste.

We must repeat the stretching operation with the second half of the dough, the one that we have left over.

Once stretched, place it on top of the mozzarella cheese and pepperoni, as a cover for the empanada. The dough should be completely covering the filling ingredients and we seal, now if we cut the excess dough leaving a 1 or 2 cm edge. all around pizza. We make some cuts in the dough that we have put on the lid, so that it can breathe during baking.

We cover the pizza with the tomato sauce and, with the oven previously hot at 180º C, we bake, with heat from below for 35-40 minutes, until we see that the dough is golden.

When the pizza is ready, we remove it from the oven and cover it with grated Parmesan cheese so that it melts in the heat of the freshly baked pizza.
