Lumberjack steak

You will love the juicy lumberjack steak with caramelized fried onions! For our recipe, the lumberjack steak is first fried in the pan until crispy and then allowed to marinate in the oven. This is how it becomes perfect!

INGREDIENTS

1 lumberjack steak from pork with rind and bone if necessary (approx. 300 g each)
ยผ tsp salt
a little pepper from the mill
2 tbsp sunflower oil or rapeseed oil
ยผ tsp paprika powder (sweet)
1 red onion
1 pinch of sugar

PREPARATION

1. Preheat the oven to 120 degrees circulating air (top and bottom heat 140 degrees). Rinse the steak, pat dry with kitchen paper and season well with salt and pepper on both sides.

2. Heat oil in a pan and fry the steak first on the rind for 2 minutes, then on both sides for about 2-3 minutes at a high temperature. Remove the steak from the pan and place it in an ovenproof casserole dish. Mix paprika powder with a little cooking oil and brush it onto the steak. Continue cooking the steak in the preheated oven for about 15 minutes.

3. In the meantime, peel the onion and cut it into strips. Sautรฉ in the remaining frying fat in the pan over a medium heat until translucent, adding the sugar and allowing it to caramelize briefly. Season the onion strips with salt. Take the steak out of the oven and arrange the caramelized onions on the steak. Fried potatoes with freshly chopped parsley go well with this. Enjoy!
