2 cups granulated sugar.
2 cups all-purpose flour.
1 cup of cocoa powder.
2 large eggs.
1 cup of almond milk.
1 cup of boiling water.
1/2 cup vegetable oil.
2 tsp pure vanilla extract.
1 1/2 tsp baking powder.
1 1/2 tsp baking soda.
1 tsp salt.
STEP 1. Preheat your oven to 350°F. Meanwhile prepare two round pan using a cooking spray.
STEP 2. In a large mixing bowl, combine all the dry ingredients then add eggs one at a time making sure well blended, milk, vegetable oil, and vanilla extract.
STEP 3. Beat on medium speed using an electric hand mixer for 2 to 3 minutes. Then stir the boiling water.
STEP 4. Pour the batter into the prepared pans and bake for 35 minutes. Remove them from the oven and let them for 10 minutes to cool.
STEP 5. prepare chocolate frosting, you will need:
1/2 cup margarine.
3 cups powdered sugar.
1 cup of cocoa.
4 tbsp milk.
1 tsp vanilla extract.
Melt margarine using a small saucepan, add cocoa, and alternately add powdered sugar and milk, beating well.
STEP 6. Pour the chocolate frosting over the first cake then place the second cake and add more frosting over the top. Place it in the fridge to chill for 30 minutes.
