Jaffa cake

Jaffa cakes are a popular British snack consisting of a soft sponge cake base topped with a layer of orange-flavored jelly and coated in a thin layer of chocolate. They are often enjoyed with tea or as a sweet treat.

Ingredients:

For the sponge base:

2 large eggs50g
(1/4 cup) caster sugar50g
(1/3 cup) all-purpose flour

For the orange jelly:

135g (4.75 oz) orange-flavored jelly (like orange Jell-O)

For the chocolate coating:

150g (5.25 oz) dark chocolate

Method:

Preheat your oven to 180°C (350°F) and grease a muffin tin or a Jaffa cake mold.Start by making the sponge base:In a bowl, whisk together the eggs and caster sugar until the mixture becomes pale and fluffy.Gently fold in the all-purpose flour until well combined.

Spoon small portions of the mixture into each mold, filling them about halfway.Bake the sponge bases in the preheated oven for about 8-10 minutes or until they are light golden brown and springy to the touch. Remove them from the oven and allow them to cool.

While the sponge bases are cooling, make the orange jelly:Follow the instructions on the package of your orange jelly to prepare it.Once prepared, let it cool slightly but not set completely.

It should be pourable.Pour a small amount of the orange jelly over each sponge base to create the orange layer. Allow it to set in the fridge for about 30 minutes.

After the orange layer has set, melt the dark chocolate:

Break the chocolate into pieces and melt it in a heatproof bowl over a pot of simmering water (double boiler), or you can use a microwave, heating in short bursts and stirring until smooth.

Pour the melted chocolate over the orange jelly layer, covering it completely.Allow the chocolate to set in the fridge for at least 2 hours, or until it’s firm.

Once set, carefully remove the Jaffa Cakes from the molds.Now, you have homemade Jaffa Cakes ready to enjoy! Keep them in an airtight container at room temperature.
