Ricotta and chocolate entremets:

Fresh ricotta
400g Butter
70g Vanilla sugar
10 g Powdered sugar
70 g Chocolate
200g Molds .


  1. Melt the butter and mix it with the vanilla sugar and powdered sugar.
  2. Add the ricotta mixture and mix everything to obtain a cream.
  3. Melt the chocolate and brush it into the molds to create the wrapper, put in the fridge for 10 minutes.
  4. Fill and cover the other chocolate in the refrigerator for one hour. Cookist wow
