CHOCOLATE GINGERBREAD CUPCAKES

makes 10-12 cupcakes:


*1 1/2 cups plain flour
*1/3 cup cacao powder 
*1 1/2 tsp instant coffee powder
*1 tsp baking powder
*1/2 tsp baking soda
*1 1/2 tsp ginger powder
*1/4 tsp salt
*1/2 cup + 2 tbsp coconut sugar 
*75g melted  chocolate pots (or df chocolate mousse/dessert pots – could try using melted chocolate)
*1 cup milk + 1 tsp apple cider vinegar
*1/4 cup coconut oil
*2 vegan eggs (6 tbsp it )

🍫preheat oven to 180 and line cupcake tin
🍫mix milk and vinegar. Set aside.
🍫sieve flour, cacao, baking powder, baking soda, ginger powder
🍫add sugar, salt, coffee powder and combine
🍫melt choc pots and add to dry
🍫add milk oil, ‘eggs’ and fold through with spatula
🍫 fill cases and bake 15-18mins until cake tester comes out clean

Frosting:

*200g thicc coconut yog  (or cream)
*2 tbsp cocoa powder
*2 tbsp cacao powder (or more cocoa if u like it sweet)

🍫sieve choc powders into yog and mix
🍫pipe and decorate
