
Ingredients
*1 1/2 cups (140g) oat flour
*1/4 cup (30g) coconut flour
*1/4 tsp salt
*1/2 tsp baking powder
*1/2 tsp baking soda
*1/3 cup (75g) softened coconut oil or vegan butter
*1/2 cup (100g)ย tahini
*1/2 cup (75g) coconut sugar
*3-4tbsp (50-68g) liquid sweetener e.g maple syrup. I usedย coconut nectar
*1 flax egg (or egg if not vegan)
*4tbsp plant milk
*1 tsp vanilla extract
*150g dark chocolate chunks
METHOD :
๐ชmix flours, baking powder, baking soda and salt
๐ชseparately whisk oil, tahini, syrup sweetener and sugar until creamy then stir in milk, flax egg and vanilla
๐ชadd dry ingredients to wet
๐ชfold in chocolate chunks (save some to top the cookies)
๐ชrefrigerate for at least 30mins
๐ชpreheat oven to 180 and line baking tray.
๐ชscoop 55g balls, top with leftover choc and bake for 13-15mins until just golden
