Custard Cream Sandwich Biscuits
For the biscuits (cookies):
• 2 cups all-purpose flour
• ½ cup sugar
• ½ cup butter (softened)
• 2 eggs
• ¼ cup vegetable oil
• 1 tsp vanilla extract
• ½ tsp baking powder
• Pinch of salt
For the custard filling:
• 1 cup milk
• 2 tbsp custard powder
• 3 tbsp sugar
• 1 tbsp butter
• ½ tsp vanilla extract
For decoration:
• Melted chocolate
• Chocolate chips (optional)

Instructions
1. Make the biscuit dough
• Cream butter and sugar until light and fluffy
• Add eggs, oil, and vanilla → mix well
• Add flour, baking powder, and salt → mix into a soft dough
• Roll out and cut into round shapes (use a cutter)
2. Bake
• Place on a lined tray
• Bake at 170–180°C for 12–15 minutes
• Let them cool completely
3. Make the custard filling
• Mix custard powder with a little milk
• Heat remaining milk + sugar
• Add custard mixture and stir till thick
• Add butter + vanilla → let it cool (it will thicken more)
4. Assemble
• Pipe or spoon custard onto one biscuit
• Sprinkle a few chocolate chips (optional)
• Cover with another biscuit (sandwich style)
5. Decorate
• Dip half of each biscuit in melted chocolate
• Add chocolate chips on top
• Let set
