Peanut Brittle (Classic & Crunchy)
Ingredients:
1 cup (200g) granulated sugar
1/2 cup (120ml) light corn syrup
1/4 cup (60ml) water
1 cup (150g) roasted peanuts (unsalted)
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt

Instructions:
Prepare the pan:
Line a baking sheet with parchment paper or lightly grease it. Set aside.
Cook the sugar mixture:
In a heavy saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves.
Add peanuts:
Stir in the peanuts and continue cooking, stirring constantly, until the mixture turns a deep golden brown (about 8–10 minutes).
Add butter & vanilla:
Remove from heat. Quickly stir in butter, vanilla, salt, and baking soda. The mixture will foam up — this creates the light, crispy texture.
Spread quickly:
Immediately pour onto the prepared baking sheet. Spread thinly using a spatula.
Cool completely:
Let it cool at room temperature for about 30 minutes.
Break into pieces:
Once hardened, break into squares or shards.
Tips:
Work quickly after adding baking soda.
Store in an airtight container at room temperature for up to 2 weeks.
You can substitute peanuts with almonds, cashews, or mixed nuts.
