Sweet Fruit Brioche Buns

Ingredients

Dough:
3 ½ cups (440 g) all-purpose flour
⅓ cup (70 g) sugar
2 ¼ tsp (7 g) instant yeast
1 tsp salt
¾ cup (180 ml) warm milk
2 eggs
½ cup (115 g) butter, softened
1 tsp vanilla extract

Topping:

Pastry cream or custard
Candied fruits (cherries, orange peel, green cherries, etc.)
Sliced almonds
Powdered sugar

Egg Wash:

1 egg
1 tbsp milk

Instructions

1️⃣ Make the Dough
In a bowl, mix warm milk, yeast, and sugar. Let it sit 5–10 minutes until foamy.
Add eggs, vanilla, and butter. Mix well.
Add flour and salt gradually and knead until soft and elastic (8–10 minutes).
Cover and let rise for 1–1.5 hours until doubled in size.

2️⃣ Shape the Buns
Divide the dough into equal pieces.
Shape each piece into a round bun.
Place them on a baking tray lined with parchment paper.
Let them rise again for 30–40 minutes.

3️⃣ Decorate
Brush buns with egg wash.
Make shallow cuts on top with a knife.
Pipe custard into the cuts.
Add candied fruits and sliced almonds.

4️⃣ Bake
Bake at 180°C (350°F) for 18–22 minutes until golden brown.

5️⃣ Finish
Dust with powdered sugar while warm.
🍮 Quick Pastry Cream (Custard)
2 cups (500 ml) milk
½ cup (100 g) sugar
3 egg yolks
3 tbsp cornstarch
1 tsp vanilla

➡️ Heat milk. Mix yolks, sugar, cornstarch. Combine and cook until thick. Add vanilla.
