Chocolate Chip Muffins
Ingredients:
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 cup milk
1/2 cup vegetable oil (or melted butter)
1 teaspoon vanilla extract
1 cup chocolate chips (plus extra for topping)

Instructions:
Preheat oven to 180°C (350°F). Line a muffin tray with paper liners.
In a large bowl, mix:
Flour
Baking powder
Salt
In another bowl, whisk together:
Eggs
Sugar
Brown sugar
Milk
Oil (or melted butter)
Vanilla
Pour the wet ingredients into the dry ingredients. Mix gently until just combined (do not overmix).
Fold in the chocolate chips.
Fill muffin cups about 3/4 full. Sprinkle extra chocolate chips on top.
Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
Let cool for 5–10 minutes before serving.
