Mini Caramel Apple Pies
Ingredients
For the crust:
2 ready-made pie crusts (or homemade)
1 egg (for egg wash)
For the apple filling:
3 apples, peeled and diced
2 tbsp butter
1/3 cup brown sugar
2 tbsp white sugar
1 tsp cinnamon
1 tbsp cornstarch
1 tbsp water
1 tsp vanilla extract
Pinch of salt
For the caramel sauce (optional):
Store-bought caramel sauce or
1/2 cup sugar
2 tbsp butter
1/4 cup heavy cream

Instructions
1. Prepare the apple filling
1. In a pan, melt the butter.
2. Add diced apples, brown sugar, white sugar, cinnamon, and salt.
3. Cook for 5–7 minutes until apples soften slightly.
4. Mix cornstarch with water to create a slurry, then add to the pan.
5. Stir until mixture thickens.
6. Remove from heat and add vanilla. Let it cool.
2. Make the crust
1. Preheat oven to 180°C (350°F).
2. Cut circles from the pie crust using a cup or cutter.
3. Press the circles into a muffin tin to form mini pie shells.
4. Cut remaining dough into thin strips for the lattice top.
3. Assemble
1. Fill each mini crust with apple filling.
2. Create a lattice pattern on top using the dough strips.
3. Brush the top with egg wash.
4. Bake
Bake for 18–22 minutes, until golden and crispy.
5. Add caramel
Drizzle warm caramel sauce on top before serving.
