Chocolate Marble Brioche
Ingredients
For the Dough
3 cups (360g) all-purpose flour
1/3 cup (70g) sugar
1 packet (7g) instant yeast
1/2 tsp salt
3 large eggs (room temperature)
1/2 cup (120ml) warm milk
1/2 cup (115g) unsalted butter, softened
For the Chocolate Dough
2 tbsp cocoa powder
2 tbsp warm milk
1 tbsp sugar
For the Chocolate Glaze
1/2 cup (120ml) heavy cream
100g dark chocolate, chopped
1 tbsp butter

Instructions
1. Prepare the Brioche Dough
1. In a bowl, whisk flour, sugar, yeast, and salt.
2. Add eggs and warm milk and mix until a dough forms.
3. Knead for 5–7 minutes.
4. Add softened butter, a little at a time, and knead until smooth and elastic (about 10 minutes).
5. Cover the dough and let rise for 1–2 hours, until doubled.
2. Make the Chocolate Dough
1. Mix cocoa powder, warm milk, and sugar into a paste.
2. Take half of the risen brioche dough and knead it with the chocolate paste until fully mixed.
Now you have:
1 vanilla dough
1 chocolate dough
3. Create the Marble Swirl
1. Roll out both doughs into rectangles of the same size.
2. Place the chocolate dough on top of the vanilla dough.
3. Roll tightly into a log.
4. Slice lengthwise and twist the two halves together (braiding).
5. Place the braid into a loaf pan.
Let rise again for 45 minutes.
4. Bake
Preheat oven to 175°C (350°F).
Bake for 30–35 minutes, until golden brown.
5. Add the Chocolate Glaze
1. Heat heavy cream until steaming.
2. Pour over chopped chocolate.
3. Add butter and mix until smooth.
4. Pour over the cooled brioche.
