Red Velvet Strawberry Cream Cake
Ingredients
For the Red Velvet Cake
2 ½ cups (310g) all-purpose flour
1 ½ cups (300g) sugar
1 cup (240ml) vegetable oil
1 cup (240ml) buttermilk (or milk + 1 tbsp vinegar)
3 large eggs
2 tbsp cocoa powder
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tbsp white vinegar
2 tsp vanilla extract
Red food coloring (liquid or gel) – enough for a bright red color
For the Cream Cheese Frosting
300g cream cheese (softened)
1 cup (230g) unsalted butter (softened)
2 ½ cups (300g) powdered sugar
2 tsp vanilla extract
For Decoration
Fresh strawberries (sliced)
Red velvet crumbs (from trimming the cake layers)

Instructions
1. Make the Red Velvet Cake
1. Preheat oven to 350°F (180°C).
2. Grease or line 3 square baking pans (or bake in one pan and cut into layers).
3. In a bowl, whisk together:
flour, cocoa powder, salt, baking soda, baking powder.
4. In another bowl, mix:
sugar + oil + eggs + vanilla.
5. Add the buttermilk and enough red food coloring to get a deep red color.
6. Add the dry ingredients into the wet ingredients and mix gently.
7. Add vinegar last and stir.
8. Pour into pans and bake for 25–30 minutes or until a toothpick comes out clean.
9. Let cool completely.
2. Make the Cream Cheese Frosting
1. Beat the butter until creamy.
2. Add cream cheese and mix until smooth.
3. Add powdered sugar gradually.
4. Add vanilla and beat until fluffy.
3. Assemble the Cake (like the photo)
1. Place the first red velvet layer on a board.
2. Pipe big dots of cream cheese frosting all over.
3. Add the second layer and repeat piping.
4. Add the third layer and pipe frosting on top.
5. Decorate with strawberry slices and cake crumbs.
