Coffee and Walnut Cake

Ingredients

For the cake:

1 cup (225g) unsalted butter, softened

1 cup (200g) sugar

4 large eggs

1 ⅔ cups (210g) all-purpose flour

2 tsp baking powder

¼ tsp salt

2 tbsp instant coffee dissolved in 2 tbsp hot water

¾ cup (80g) chopped walnuts

For the frosting:

¾ cup (170g) unsalted butter, softened

2 cups (250g) powdered sugar

1 tbsp instant coffee dissolved in 1 tbsp hot water

½ cup (50g) chopped walnuts (for decoration)

Instructions

1. Prepare the cake

1. Preheat your oven to 180°C (350°F).

2. Grease and line two 20 cm (8-inch) round cake pans.

3. In a bowl, beat the butter and sugar until light and fluffy.

4. Add the eggs one at a time, mixing well after each addition.

5. Add the dissolved coffee and mix.

6. In another bowl, combine flour, baking powder, and salt.

7. Add the dry ingredients to the butter mixture and mix until combined.

8. Fold in the chopped walnuts.

9. Divide batter between the two pans and smooth the top.

2. Bake

Bake for 25–30 minutes, or until a toothpick comes out clean.

Let the cakes cool completely.

3. Make the frosting

1. Beat the butter until creamy.

2. Add powdered sugar gradually and beat until smooth.

3. Add dissolved coffee and mix until creamy.

4. Assemble

1. Spread a layer of frosting on top of one cake.

2. Place the second cake on top and frost the top and sides.

3. Decorate with chopped walnuts.
