Carrot Cake

Carrot Cake Recipe (with Cream Cheese Frosting)

Ingredients

For the Cake

2 cups grated carrots

1 ½ cups all-purpose flour

1 cup sugar

½ cup brown sugar

2 large eggs

½ cup vegetable oil

1 tsp vanilla extract

1 ½ tsp baking powder

½ tsp baking soda

1 tsp cinnamon

½ tsp nutmeg (optional)

¼ tsp salt

For the Cream Cheese Frosting

200 g cream cheese (softened)

½ cup butter (softened)

2 cups powdered sugar

1 tsp vanilla extract

Instructions

1. Make the Cake

1. Preheat the oven to 180°C (350°F).

2. Grease and line a loaf pan or round cake pan.

3. In a bowl, mix: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

4. In another bowl, whisk: eggs, oil, sugar, brown sugar, and vanilla.

5. Add the dry ingredients to the wet ingredients and mix gently.

6. Add the grated carrots and fold into the batter.

7. Pour into the baking pan and bake for 40–50 minutes, or until a toothpick comes out clean.

8. Let the cake cool completely.

2. Make the Cream Cheese Frosting

1. Beat the cream cheese and butter until smooth.

2. Add powdered sugar gradually.

3. Add vanilla and mix until creamy.

3. Assemble

1. Slice the cake into two layers.

2. Spread frosting in the middle.

3. Add the top layer and frost the whole cake.
