Fresh Orange Upside-Down Cake
Ingredients:
For the topping:
2 large oranges (thinly sliced)
2 tablespoons sugar
1 tablespoon melted butter
For the cake:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
3 large eggs
¾ cup sugar
½ cup vegetable oil (or melted butter)
½ cup fresh orange juice
¼ cup milk
1 tablespoon orange zest
1 teaspoon vanilla extract

Instructions:
1. Prepare the pan:
Grease a round cake pan and line the bottom with parchment paper. Brush with melted butter and sprinkle with 2 tablespoons of sugar.
2. Arrange the oranges:
Place the thin orange slices neatly on the bottom of the pan (this will become the top when inverted).
3. Mix dry ingredients:
In a bowl, combine flour, baking powder, baking soda, and salt. Mix well.
4. Mix wet ingredients:
In another bowl, beat eggs and sugar until light and fluffy. Add oil, orange juice, milk, orange zest, and vanilla. Mix well.
5. Combine:
Gradually add the dry ingredients into the wet mixture. Mix gently until smooth.
6. Bake:
Pour the batter into the pan (over the orange slices).
Bake in a preheated oven at 170°C (340°F) for about 35–40 minutes, or until a toothpick inserted comes out clean.
7. Cool and flip:
Let the cake cool for 10 minutes, then gently flip it onto a plate to reveal the orange slices on top.
8. Serve:
Slice and enjoy your moist, citrusy orange cake!
