Funfetti Birthday Cake Recipe
Ingredients
For the Cake:
2 ½ cups (310g) all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup (230g) unsalted butter, softened
1 ¾ cups (350g) sugar
4 large eggs
1 tbsp vanilla extract
1 cup (240ml) whole milk
½ cup (100g) rainbow sprinkles
For the Frosting:
1 cup (230g) unsalted butter, softened
4 cups (500g) powdered sugar
2 tsp vanilla extract
2–4 tbsp heavy cream or milk
Pinch of salt
Decoration:
Extra rainbow sprinkles

Instructions
1. Preheat oven to 350°F (175°C).
Grease and line two 8-inch (20 cm) round cake pans with parchment paper.
2. Mix dry ingredients:
In a bowl, whisk together flour, baking powder, and salt. Set aside.
3. Cream butter and sugar:
In a large bowl, beat butter and sugar with an electric mixer until light and fluffy (about 2–3 minutes).
4. Add eggs and vanilla:
Beat in eggs one at a time, then add vanilla extract.
5. Combine wet and dry ingredients:
Add flour mixture in three parts, alternating with milk. Mix until just combined.
Gently fold in the sprinkles.
6. Bake:
Divide batter evenly into the two pans.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before frosting.
7. Make frosting:
Beat butter until creamy. Gradually add powdered sugar, vanilla, salt, and 2 tablespoons cream.
Beat until fluffy, adding more cream if needed for smoothness.
8. Assemble the cake:
Place one cake layer on a plate, spread frosting on top, then add the second layer.
Frost the top and sides of the cake.
9. Decorate:
Pipe swirls on top and add colorful sprinkles for a fun finish!
