Strawberry Mango Delight Cake
Ingredients:
For the Cake:
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
4 large eggs (room temp)
1 tsp vanilla extract
1 cup milk (or buttermilk)
For the Filling:
1 ½ cups fresh strawberries (chopped)
1 ½ cups fresh mango (chopped)
2 tbsp sugar (optional)
1 tbsp lemon juice
For the Whipped Cream Frosting:
2 cups heavy whipping cream (cold)
½ cup powdered sugar
1 tsp vanilla extract
Optional Garnish:
Fresh strawberry slices
Fresh mango slices
Mint leaves

Instructions:
1. Prepare the Cake Layers
Preheat oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
In a bowl, whisk flour, baking powder, and salt.
In another bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well, then vanilla.
Alternate adding dry ingredients and milk, mixing until smooth.
Divide batter into pans and bake for 25–30 mins, until a toothpick comes out clean.
Cool completely.
2. Make the Fruit Filling
In a bowl, combine chopped strawberries and mango with sugar and lemon juice.
Let it sit for 10–15 minutes to release juices.
3. Whipped Cream Frosting
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
4. Assemble the Cake
Slice each cake layer in half (for 4 thin layers, optional).
Place first layer, spread whipped cream, then spoon fruit filling.
Repeat layers, finishing with whipped cream on top and sides.
5. Decorate
Arrange fresh strawberry and mango slices beautifully on top.
Chill for at least 1 hour before serving for best texture.
