Berry tart with quark

This berry tart with quark is particularly delicious thanks to the moist sponge cake, sweet chocolate, and a delicate quark cream.  The light quark and cream mixture is guaranteed to be a success!

INGREDIENTS

FOR THE DOUGH
150 g flour type 405
2 tsp baking powder
150 g sugar
1 pinch of salt
170 g softened butter
3 eggs (size M)
50 g grated chocolate
A little butter for the pan

FOR THE CREAM

500 g low-fat quark
70 g sugar
200 g heavy cream
2 packets of whipped cream stabilizer
200 g mixed berries and/or cherries

PREPARATION

Step 1
Grease a 20 cm springform pan.  Preheat oven to 180°C (160°C fan/convection oven). Mix flour, baking powder, sugar, and salt in a bowl. Add butter and eggs. Beat with the whisk attachment of a hand mixer for 2 minutes until fluffy. Finally, stir the chocolate into the batter.

Step 2
Pour the batter into the pan and smooth it out. Bake for about 25 minutes. Let cool completely. Remove the base from the pan and cut it in half horizontally.

Step 3
Mix the quark with the sugar. Whip the cream with the cream stiffener until stiff and fold it into the quark. Spread 2/3 of it over the base and smooth it down. Place the second layer on top.

Step 4
Spread the remaining cream on top and chill until ready to serve. Garnish with berries and cherries, if desired.
