Cinnamon Walnut Rolls with Creamy Cream Cheese Icing
Soft and fluffy rolls filled with cinnamon and walnuts, topped with a delicious creamy glaze. Perfect for breakfast or a snack!
Ingredients:
For the Dough:
7 tbsp (80g) sugar
1 tsp (4g) dry yeast
1 cup (240ml) warm milk
4 cups (480g) all-purpose flour
1/2 tsp (3g) salt
1/4 cup (60g) melted unsalted butter
For the Filling:
1/3 cup (70g) brown sugar
2 tbsp (100g) 1 tbsp ground cinnamon
1/4 cup (60g) melted unsalted butter
1/2 cup (60g) chopped walnuts (optional)
For the Frosting:
4 tbsp (60g) cream cheese, such as Philadelphia
2 tbsp (30g) softened unsalted butter
1/2 cup (60g) icing sugar
1 tsp vanilla extract

Instructions:
1. Prepare the Dough:
In a bowl, combine the warm milk, sugar, and yeast. Let stand for 5-10 minutes until foamy.
Add the flour, salt, and melted butter. Knead for 8-10 minutes until the dough is smooth and elastic.
Cover with a cloth and let rise for 1.5 hours (or until doubled in size).
2. Fill and Roll:
Roll out the dough on a floured surface into a rectangle approximately 30×40 cm.
Brush with melted butter, then sprinkle with cinnamon, brown sugar, and walnuts.
Roll up tightly, starting from the long side, then cut into 12 slices (2-3 cm thick).
3. Bake:
Place the rolls in a greased pan, spacing 2 cm apart.
Let rise for another 30 minutes.
Preheat the oven to 180°C and bake for 20-25 minutes until golden brown.
4. Glaze:
Whisk together the cream cheese, softened butter, icing sugar, and vanilla until smooth.
Spread over the still-warm rolls.

✔ For extra-soft brioche buns, replace 1/2 cup of flour with cornstarch.
✔ Variations: Add raisins or almond flour to the filling.
✔ Storage: At room temperature (2 days) or in the freezer (1 month).
