Gnocchi Casserole

With this vegetarian gnocchi casserole, you can quickly and easily conjure up a fantastic meal! Fruity tomatoes and delicious mozzarella add a special flavor!

INGREDIENTS

FOR THE GNOCCHI

500g gnocchi
1.5 tsp salt
4 tbsp olive oil
1 pinch of pepper

FOR THE TOMATO SAUCE

400g canned chopped tomatoes
1/2 tsp salt
A pinch of pepper
2 tsp dried Italian herbs (e.g., oregano, basil, or a spice mix)
2 tbsp olive oil
1 medium onion
1 clove garlic
150g cherry tomatoes

ALSO

200g grated mozzarella

PREPARATION

1. Add the gnocchi to generously salted, boiling water and bring to a boil until they float to the surface. Let them simmer over low heat for about 2 minutes, then remove and rinse in a colander with cold water. Drain well.

2. Heat the olive oil in a pan.  Fry the gnocchi until golden brown and season with salt and pepper. Place the canned tomatoes in a bowl and toss with salt, pepper, the dried herbs, and the olive oil.

3. Peel the onion and finely dice. Peel the garlic and finely mince it. Halve the cherry tomatoes. Mix the onion, garlic, tomatoes, and tomato sauce together in the bowl and spread evenly in a baking dish.

4. Preheat the oven to 180°C fan/convection oven (200°C top and bottom heat). Mix the gnocchi with the tomato sauce and sprinkle everything with the grated cheese. Bake in the preheated oven for about 20 minutes.
