Sheet Pan Walnut Cake

Sheet pan walnut cake is so moist and delicious.ย  This quick recipe with delicious chocolate icing is guaranteed to be a hit at any cake table.

INGREDIENTS

FOR THE DOUGH

300 g walnuts
5 eggs (size M)
250 g softened butter
250 g sugar
2 pinches of salt
220 g plain flour (type 405)
3 tsp baking powder

FOR THE GLAZE

200 g dark chocolate coating
3 tbsp neutral cooking oil (e.g., sunflower oil)
50 g walnut halves

ALSO

A little butter for the baking sheet

PREPARATION

Step 1
Preheat the oven to 180ยฐC (350ยฐF) top/bottom heat (160ยฐC (fan oven).ย  Grease a baking sheet (approx. 38 x 45 cm) and line it with a piece of parchment paper if desired. Grind the walnuts in a food processor. Separate 3 eggs. Set egg whites aside.

Step 2
Beat the butter, 150 g sugar, and salt with the whisk attachment of a hand mixer on high speed for about 2 minutes until fluffy and white. Add 3 egg yolks and continue beating. Add 2 whole eggs and continue beating.

Step 3
Mix the flour and baking powder and stir into the batter alternately with the ground nuts. Beat 3 egg whites with the remaining 100 g sugar until stiff peaks form and fold into the batter. Pour the walnut dough onto the prepared baking sheet, smooth it evenly, and bake in the preheated oven for about 30 minutes. Let the walnut cake cool on the baking sheet.

Step 4
For the glaze, roughly chop the chocolate coating and melt it in a bowl over a pan of hot water. Stir in the oil. Pour the chocolate coating onto the surface of the cake and spread it evenly with a cake server or a brush.

Step 5
Decorate the cake with walnut halves, let it set, and serve. This quick sheet cake makes about 20 slices and will keep for at least 3 days in an airtight container at room temperature.

Using up nuts
If you have leftover nuts or almonds at home, you can substitute some of the walnuts with them.
