LEMON AND BLUEBERRY YOGURT CAKE WITH GLITTERY GLAZE

INGREDIENTS
For the cake:
• 1 1/2 cups all-purpose flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1 cup plain or Greek yogurt (unsweetened)
• 3/4 cup sugar
• 1/2 cup vegetable oil
• 2 large eggs
• Zest of 1 lemon
• 2 tbsp lemon juice
• 1 tsp vanilla extract
• 1 cup fresh blueberries (you can use frozen and floured ones)
For the lemon glaze:
• 1 cup powdered sugar
• 2–3 tbsp lemon juice

PREPARATION
1️⃣ Preheat the oven to Heat oven to 175°C (350°F) and grease a loaf pan.
2️⃣ Combine the flour, baking powder, baking soda, and salt in a bowl.
3️⃣ In another bowl, whisk together the yogurt, sugar, eggs, oil, lemon zest and juice, and vanilla.
4️⃣ Add the dry ingredients and mix until combined.
5️⃣ Gently fold in the blueberries (dipped in flour to prevent them from sinking).
6️⃣ Pour the mixture into the pan and bake for 45 to 55 minutes, or until a toothpick comes out clean.
7️⃣ Let cool in the pan for 10 minutes, then remove from the pan and cool completely.
8️⃣ Prepare the glaze by mixing the powdered sugar with the lemon juice until smooth.
9️⃣ Decorate the cake with the frosting and more blueberries if desired.
