PIZZA DOUGH

Ingredients:

306 g flour, half 00 flour and half regular flour
202 ml water
10 g salt
4 g dry yeast
1 tablespoon extra virgin olive oil

Preparation:

1. First, heat the water a little in the microwave. 20 to 25 seconds is usually enough. If you’re using fresh yeast, dissolve it in the water with a whisk.

If you have dry yeast, you can add it to warm water or directly to the dough.

2. Mix the salt and flour in a bowl and pour the water and yeast mixture along with the oil. Mix everything together until you get a smooth dough and let it rest for 15 minutes.

3. Form two balls of dough and knead them for 3 to 5 minutes.  We let them rest for a day in the refrigerator or if we want to prepare them the same day, for 3-4 hours at room temperature.
