This applesauce cake with vanilla pudding, sponge cake, and sour cream is simply unbeatably delicious. With this recipe, you’ll be making this creamy cake more often.
INGREDIENTS
FOR THE SPONGE CAKE
3 eggs (size M)
120 g sugar
2 tbsp hot water
100 g plain flour (type 405)
30 g cornstarch
1 tsp baking powder
FOR THE APPLESUFF FILLING
500 ml apple juice
2 tbsp sugar
2 packets vanilla pudding powder
400 g applesauce
FOR THE CREAM
200 g heavy cream
2 packets cream stiffener
1 packet vanilla sugar
200 g sour cream
1 tsp cocoa powder

PREPARATION
Step 1
Preheat oven to 180°C (350°F) top/bottom heat (160°C fan/convection oven). Line a 26 cm springform pan with baking paper.
Step 2
For the sponge cake, beat the eggs and sugar until frothy, then add the hot water. Mix the flour, starch, and baking powder in a bowl, sift, and fold in. Pour the sponge mixture into the pan and level the surface.
Step 3
Bake the sponge in the preheated oven for about 25 minutes. Let it cool, then remove it from the pan. Once the base is completely cool, place it on a cake plate and place a cake ring in the center.
Step 4
For the applesauce filling, bring two-thirds of the apple juice to a boil. Whisk the remaining apple juice with the sugar and pudding mix until smooth. Once the apple juice boils, stir in the pudding mix and simmer for about 2 minutes. Let it cool briefly, then stir in the applesauce.
