Ingredients
● For the Crust:
1 1/2 cups chocolate wafer crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
● For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1/2 cup sour cream
1/2 cup heavy cream
● For the Swirls:
1/2 cup dark chocolate, melted
1/2 cup fresh strawberries, pureed (or strawberry jam)
● For the Ganache:
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
● For Garnish:
Fresh strawberries

Instructions
1: Preheat your oven to 325°F (165°C) and combine chocolate wafer crumbs, sugar, and melted butter; press this mixture firmly into the bottom of a 9-inch springform pan, bake for 10 minutes, then let it cool.
2: Beat cream cheese with granulated sugar until smooth and creamy, then add eggs one at a time, followed by vanilla extract, sour cream, and heavy cream until fully combined.
3: Divide the cheesecake batter in half – stir melted dark chocolate into one half for a rich, velvety swirl, and mix pureed strawberries (or jam) into the other half for a vibrant twist.
4: Pour the chocolate batter into the crust, then layer the strawberry batter on top; use a knife or skewer to gently create a marbled effect by swirling the two together.
5: Bake at 325°F (165°C) for 55-65 minutes until the center is set yet slightly jiggly; turn off the oven and let the cheesecake cool inside for 1 hour.
6: For the ganache, heat 1/2 cup heavy cream until it begins to simmer, remove from heat, and stir in the semi-sweet chocolate chips until smooth.
7: Once cooled to room temperature, refrigerate the cheesecake for at least 4 hours or overnight.
8: When ready to serve, top with the luscious ganache and garnish with fresh strawberries – slice and savor every dreamy bite!
