Baked pork medallions from the oven – our recipe with mushrooms and spicy cheese is soo easy and ready in no time!

INGREDIENTS

400 g pork fillet
20 g flour
Salt
Ground pepper
Sunflower oil for frying
100 g grated cheese (e.g. Emmental)
½ bunch of parsley

FOR THE SAUCE

200 g brown mushrooms
1 medium onion
1 clove of garlic
1 tbsp butter
100 ml white wine
150 g crème fraîche
¼ tsp salt
1 large pinch of pepper

PREPARATION

1. For the baked pork loins, cut the pork fillet into medallions of equal size.  Preheat the oven to 140 degrees top and bottom heat.

2. Put the flour in a deep plate. Season the medallions all over with a little salt and pepper and turn them in the flour. Heat the oil in a pan and fry the meat for 2 minutes on each side. Remove the medallions from the pan and set aside.

3. For the sauce, halve the mushrooms or cut them into thin slices as desired. Peel the onion and garlic and dice finely. Put the butter in the pan and melt. Fry the mushrooms for about 3 minutes over medium heat until golden brown. Add the diced onion and fry for another 2 minutes. Finally, add the chopped garlic to the pan and fry for about 1 minute.

4. Deglaze the fried vegetables with the white wine and let everything simmer gently until the wine has completely reduced.  Then stir in the crème fraîche, season everything with salt and pepper and simmer for about 5 minutes over a gentle heat.

5. Pour the mushroom sauce into the casserole dish and spread the pork medallions on top. Sprinkle the medallions evenly with the cheese and cook in the preheated oven for about 8 minutes. Then set the oven to the grill function and gratinate the fillets for about 3 more minutes. In the meantime, wash the parsley, shake dry and chop finely. As soon as the pork loins are golden brown, take the casserole dish out of the oven and sprinkle everything with parsley. Enjoy!
