Streusel cookies

These streusel cookies are brilliant: cookies and streusel are simply made from one dough. This saves time and the cookies are guaranteed to be a success. With jam, the crispy cookies become fruity and delicious.
INGREDIENTS (for 50 cookies)
FOR THE DOUGH
300 g wheat flour (type 405)
120 g powdered sugar
1 pack of bourbon vanilla sugar
1 pinch of salt
180 g cold butter
1 egg (size M)
2 tablespoons water
ALSO
250 g jam as desired
some flour for working
PREPARATION
Step 1
For the dough, mix the flour with the powdered sugar, vanilla sugar and salt in a bowl. Add the cold butter in pieces and the egg.Β Quickly knead with your hands to form a crumbly dough. Remove a quarter of the dough and refrigerate.
Step 2
Add the water to the remaining dough and finish kneading to form a smooth dough. Wrap in cling film (alternatively: a cut open freezer bag) and refrigerate for 30 minutes. Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Line the baking tray with baking paper.
Step 3
Take the shortcrust pastry out of the cling film and roll it out on a lightly floured work surface until it is about 3 mm thin. Cut the dough into squares or alternatively cut out circles (Γ 3 cm). Place the cookies on the prepared tray.
Step 4
Stir the jam until smooth, put a small dollop on each cookie and spread a little.
Step 5
Cover with the crumbles that you set aside.Β Bake in the preheated oven for about 13 minutes until golden brown.
