Peach Cake Recipe
Ingredients:
2 cups all-purpose flour
1 ½ cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
½ cup milk
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
2 cups fresh peaches, chopped
½ cup peach preserves
Instructions:
1. Prepare the Oven and Pan:
Preheat the oven to 350°F (175°C).
Grease and flour a 9×13-inch pan or two 9-inch round cake pans.
2. Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Cream the Butter and Sugar:
In a large bowl, use a mixer to cream the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
4. Add the Eggs and Vanilla:
Beat in the eggs one at a time, ensuring each is fully incorporated.
Mix in the vanilla extract.
5. Alternate Adding Dry Ingredients and Milk:
Add the flour mixture in three parts, alternating with the milk, starting and ending with the dry ingredients. Mix just until combined.
6. Fold in the Peaches:
Gently fold in the chopped peaches using a spatula.
7. Bake the Cake:
Pour the batter into the prepared pan(s).
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
8. Glaze with Peach Preserves:
While the cake is still warm, gently spread the peach preserves over the top for a glossy finish.
Optional:
Sprinkle with powdered sugar or serve with whipped cream or vanilla ice cream for an extra treat.
