Meatloaf with Mashed Potato Topping
Ingredients:
For the Meatloaf:
1 lb. ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup ketchup
1/4 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
For the Mashed Potatoes:
2 cups mashed potatoes, whipped until creamy
2 tablespoons butter (optional, for extra richness)
Salt to taste
Chopped chives for garnish
Instructions:
1. Prepare the Meatloaf:
Preheat the oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined—do not overmix to keep the meatloaf tender.
Transfer the mixture to a greased loaf pan or shape into a loaf on a baking sheet.
2. Bake the Meatloaf:
Place the meatloaf in the preheated oven and bake for 40-45 minutes, or until the internal temperature reaches 160°F (71°C).
Remove from the oven and let it rest for 5 minutes before topping.
3. Prepare the Mashed Potatoes:
If not already prepared, whip the mashed potatoes with butter and salt until creamy and smooth.
Spoon or pipe the mashed potatoes over the meatloaf in an even layer.
4. Broil for a Golden Finish (Optional):
Turn the oven to broil on high.
Place the meatloaf with the mashed potato topping under the broiler for 2-3 minutes, or until the potatoes develop a light golden crust.
