Easy & Delicious Lemon Loaf Cake
This lemon loaf cake is moist, flavorful, and so simple to make. The combination of fresh lemon juice, zest, and a sweet lemon icing gives it a refreshing and tangy flavor perfect for any occasion.
Lemon Loaf Cake Recipe
Ingredients:
For the Cake:
1½ cups (190g) all-purpose flour
1 cup (200g) granulated sugar
½ cup (115g) unsalted butter, softened
½ cup (120ml) milk
2 large eggs
2 tablespoons lemon zest (about 2 lemons)
¼ cup (60ml) fresh lemon juice
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
For the Lemon Icing:
1 cup (120g) powdered sugar
1-2 tablespoons fresh lemon juice (adjust for desired consistency)
Instructions:
Step 1: Prepare the Cake
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Then, mix in the lemon zest, lemon juice, and vanilla extract.
Gradually add the flour mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined; do not overmix.
Step 2: Bake the Cake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Step 3: Prepare the Lemon Icing
In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Add more lemon juice if you prefer a thinner icing.
Once the loaf has cooled, drizzle the lemon icing over the top.
