Caramel Cheesecake Bars
Caramel Cheesecake Bars are a luscious combination of creamy cheesecake and buttery caramel, all on top of a graham cracker crust. They’re a perfect dessert for any caramel lover!
Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Layer:
2 (8-ounce) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup caramel sauce, plus extra for drizzling
Instructions
Step 1: Prepare the Crust
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
Press the mixture firmly into the bottom of the prepared pan to create an even crust layer.
Bake for 8-10 minutes, then set aside to cool slightly.
Step 2: Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
Add in the eggs one at a time, mixing well after each addition.
Mix in the vanilla extract and caramel sauce until fully combined.
Step 3: Assemble and Bake
Pour the cheesecake mixture over the pre-baked crust, spreading it evenly.
Bake for 30-35 minutes, or until the edges are set and the center has a slight jiggle.
Let the bars cool to room temperature, then refrigerate for at least 2 hours or until fully set.
Step 4: Serve
Lift the bars out of the pan using the parchment overhang and slice them into squares.
Drizzle extra caramel sauce over the top before serving.
Tips:
For an extra touch, sprinkle a bit of sea salt on top of the caramel drizzle for a salted caramel effect.
These bars can be stored in the refrigerator for up to 5 days.
