Ingredients:
• 2 1/2 cups all-purpose flour
• 2 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1 cup unsalted butter, softened
• 1 3/4 cups granulated sugar
• 4 large eggs
• 1 tbsp lemon zest
• 1/4 cup fresh lemon juice
• 1 tsp vanilla extract
• 1 cup buttermilk
• 1 1/2 cups fresh strawberries, diced
• 2 tbsp all-purpose flour (for coating strawberries)
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. Mix 2 1/2 cups flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
3. Cream butter and sugar in a large bowl until light and fluffy. Beat in eggs one at a time, then stir in lemon zest, lemon juice, and vanilla extract.
4. Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
5. Toss strawberries with 2 tbsp flour and gently fold them into the batter.
6. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
8. Frost with your favorite lemon or vanilla frosting and garnish with fresh strawberries and lemon slices.
