Mason-style eggs, known as “huevos a la albañil” in Spanish, represent a savory and satisfying Mexican culinary creation. This dish features fried eggs placed atop a foundation of flavorful refried beans, offering a harmonious blend of textures and tastes.
Ingredients
8 Eggs
4 tomatoes
1/2 Onion
2 cloves Garlic
8 dried tree chiles
200 grams Fresh cheese
8 Corn tortillas
2 tbsp Oil
Salt and pepper
Method
1-First you must roast the tomatoes, onion, garlic and half of the chilies on a comal.
2-Then, blend and strain. Booking.
3-Now brown the rest of the chilies in a pan and pour the sauce. Salt pepper.
4-Cook for 5 minutes.
5-Now beat the eggs lightly and fry in a pan with hot oil. Cook for 5 minutes.
6-Then add the eggs to the sauce and mix.
7-Finally, adjust seasoning and cook for 5 more minutes.
8-It’s time to serve and accompany it with refried beans, fresh cheese and accompany it with the tortillas.
