SNOW ALFAJORS
For the mass:
250g of flour
100g of ointment butter
80g of sugar
3 yolks
1 egg
1 tsp vanilla
1 tsp of baking powder
1 tsp bicarbonate of soda
3 tablespoons cocoa powder
Dulce de leche confectioner w/n
Beat the butter with the sugar until a cream forms. Add the egg and vanilla. Add sifted dry ingredients. Join with your hands without kneading much, wrap in film and take to the fridge for 30 minutes.
Roll out the dough, cut the lids, place them on a buttered and floured plate and cook in a preheated oven at 180° for approximately 10-12 minutes without letting them brown too much. Remove, let cool and fill with dulce de leche.
For snow cover:
200g of powdered sugar
1 clear
Lemon juice
200g of common sugar
50cc of water
Make a light syrup with common sugar and water.
Meanwhile, make a glaze by beating the white with the powdered sugar and a few drops of lemon juice. Pour the hot syrup over the glaze, mix and use immediately to bathe the alfajores. Let dry.
