Vanilla sponge cake
11oz self raising flour
12 oz caster sugar
1 tsp baking powder
2 tbsp vanilla extract
1/2 tsp salt
2 tubs Waitrose Cooks’ Ingredients Sicilian Lemon Icing
1/4 cup Tequila
1 cup Icing sugar
2 tbsp lime juice
Green gel food colouring
1.To make the cakes cream the butter & sugar together, then incorporate the eggs, salt & flour. Add the vanilla extract mix until combined. (Do not over mix)
2.Line a 6” & 8”cake tin. Pour the cake mixture into the tins and bake for 25-30 mins. Note:The 6” cake will finish baking before the 8” cake.
3.To make the icing, mix the lemon icing, tequila, lime juice and food colouring in a bowl. It will be a bit too soft/runny. Slowly add sifted icing sugar until you get the desired consistency to spread on the cake.
4.Once the cakes have cooled, cut them in half, ice and add the strawberry jam then cover the cake in the icing, it doesn’t have to be neat.
5.To stack the cakes use straws and a small cake board, then decorate the cake with strawberries, rosemary, mint and line wedges.
